Yetakelt W'et (Ethiopian Vegetable Stew)

This is a spicy vegetable stew using the berbere spice.  The recipe below includes veggies that I had in my house, but feel free to use any veggies you like.

Ingredients

1 large onion, chopped fine

4 garlic cloves, crushed or minced

2 tbsp berbere

1 tbsp paprika

2 tbsp

niter kibbeh

1 cup french beans, cut in thirds

2 carrots, sliced in rounds

2 potatoes, cubed

2 tomatoes, cubed

1/2 cup peas

2 tbsp tomato paste

2 cups veggie stock

1 cup water

1 tsp salt (or to taste)

1/2 tsp pepper

1/4 cup parsley, chopped

2 scallions, cut in thin rounds

1/2 bell pepper, cubed

Directions

1.  Saute the onions, garlic, berbere, and paprika in the niter kibbeh for 3 minutes (till onions are translucent) on med-high heat.

2.  Add the green beans, carrots, peas, and potatoes.  Cook for 10-15 minutes.

3.  Add the tomatoes, tomato paste, veggie stock, and water.  Simmer until the potatoes are done.

4.  Add salt, pepper, parsley, scallions, and bell peppers.  Serve hot.
