Egg-less (Vegan) Egg Salad
Ingredients
2 lbs extra firm tofu
2/3 cup vegan mayo
2 tsp paprika
1/2 tsp turmeric
1/2 tsp salt
1/2 tsp pepper
1 tsp cumin
2 celery stalks
4 radishes
6 baby carrots
1 scallion
Directions
1. Mash the tofu using a fork, until it's all broken up.
2. Add in all of the spices and mix until it looks uniform.
3. Mix in the remaining ingredients. Refrigerate until ready to serve.
