Buffalo Cauliflower Salad with Ranch

This is a long overdue recipe that ties together the tangy, spicy Buffalo cauliflower and creamy ranch dressing recipes that I posted last year. I keep the salad part of it minimal so that the cauliflower is the star, but feel free to add other salad items like carrots and cucumbers.

Ingredients (for 1 serving of a main dish-size salad)

10-12 Buffalo cauliflower florets

3 oz salad greens (I like Spring mix, but arugula or a lettuce blend would also taste good)

4 cherry or grape tomatoes, cut in half

1 tbsp Ranch dressing

Optional garnishes: Pickled onions, scallions, cilantro

Directions

1. If the Buffalo cauliflower is not warm, reheat the florets briefly in the toaster or air fryer.

2. Arrange the salad greens and tomatoes in your serving bowl or plate.

3. Place the Buffalo cauliflower on top. Then drizzle with ranch dressing. Optional: garnish with pickled onions, scallions, and/or cilantro on top.
