Raspberry "Pi" (Pie)

HAPPY PI DAY!!! In honor of this amazing number, I couldn't resist making... PI(E)!  =)  This is an quick, easy recipe if you have ready-made pie dough or crust (which I did).  The decoration was just black icing on vanilla wafers.   On non-pi days, I usually just dust some confectioner's sugar on top or arrange slivered almonds to make it look nice.

Ingredients

1 sheet of pie dough (bake as directed) or ready-made pie crust

2 cups raspberries

1 tbsp sugar

1 tbsp cornstarch

1/2 tsp vanilla extract

1/2 tsp almond extract

pinch of salt

Directions

1.  In a large bowl, gently (try not to smash the raspberries!) mix the raspberries, sugar, cornstarch, vanilla, almond extract, and salt together.

2.  Arrange the raspberry mix evenly in the baked pie crust.  Cover the edges of the pie crust with thin strips of foil so that they don't burn when you bake it again with the filling inside.

3.  Bake at 350 for 15-20 mins.  Serve hot or cold, with or without ice cream!
