Arrabbiata Sauce (Spicy Tomato Sauce)

My all time favorite sauce for pasta, pizza, baked dishes, and a lot of other foods- sometimes I only use a tablespoon or so for flavor. This sauce is simple, but does take time to make because I like to add the ingredients one at a time and then simmer it. I tend to make this in a big batch and freeze the extra.

Ingredients

2.5 tbsp olive oil

1.5 cups onions, diced

1/2 tsp salt

1-2 tsp crushed red pepper, depending on how spicy you want it

3 tbsp garlic, minced (10-12 cloves)

1/2 cup white wine

1 tbsp Italian seasoning

28 oz tomatoes, chopped or crushed (I use Cento San Marzano)

additional salt to taste

Directions

1.  In a large heavy bottom pan, heat the olive oil, onions, and salt on medium heat.  Cook for 8-10 mins, until onions soften.

2.  Add the crushed red pepper and cook for an additional 2 mins.  Add the garlic and cook for an additional 3-5 mins, until the garlic turns a very light brown.

3.  Add the white wine (optional) and simmer until the wine is almost burned off.

4.  Add the tomatoes, Italian seasoning, and additional salt to taste.  Bring to a boil then turn the heat down.  Cover and simmer for 30 mins.
