Roasted Red Pepper Sauce

In the spirit of Valentine's Day, I wanted to make something red or pink.  We had an open carton of roasted red pepper soup from Trader Joe's, so I decided to use that as the base for the sauce.  This is a nice sauce to use with pasta.  You can also add veggies if you want, although I like to keep it simple since the sauce itself has a lot of flavor.

Ingredients

3 tbsp olive oil

3 cloves garlic, minced

1/2 medium onion, chopped

3 tbsp all purpose flour

1.5 cups milk

1.5 cups roasted red pepper soup

1/4 tsp salt

1/4 tsp ground black pepper

1 tsp Italian seasoning

Directions

1.  Saute onions and garlic in olive oil for ~5 min on medium heat.

2.  Add flour and brown for about 2 min.

3.  Add milk, a little at a time, stirring, constantly so lumps do not form.  Once all of the milk is added and the mixture is uniform and not lumpy, add the roasted red pepper soup, salt, pepper, and Italian seasoning.  Simmer on medium heat, stirring constantly, until the sauce thickens (10-15 min).

4.  Add sauce to your favorite pasta and serve hot!
