Pear Cocoa Nib Salad with Espresso Vinaigrette
As promised in the last post, I'm posting one of the salad combinations that I really like using the espresso vinaigrette. I used seckle pears since they are in season right now, but I think whichever pear you like would taste good.
Ingredients
2 oz mixed greens
2 seckle pears (or 1/2 a large pear), cut into pieces ~1/2 inch big
1 oz fresh mozzarella, cut into small cubes
1 tsp cocoa nibs
1 tsp chopped macadamia nuts
1-2 tbsp espresso vinaigrette (depending on your taste)
Directions
1. Toss everything together and enjoy!
