Maple Yerba Mate Iced Tea

Who wants to turn the stove on in the summer heat- not me! This is my twist on sun tea that uses Yerba Mate instead of black tea. I used maple syrup as the sweetener since it pairs really with the roasted, smoky flavors from the Yerba Mate tea to make a complex, refreshing iced tea that I love sipping on throughout the day!
Ingredients
4 cups water
4 tbsp Yerba Mate tea leaves
4 tbsp maple syrup
1 tbsp fresh lemon juice
lemon slices for serving (optional)
Directions
1. Combine the water and yerba mate leaves in a large glass bowl or jar. Cover and let this sit at room temperature for approximately 12 hours.
2. Pour the steeped tea through a fine mesh strainer into a glass pitcher / jug / bottle. Add the maple syrup and lemon juice and mix well. Store in the fridge until ready to serve.
3. Serve over a glass full of ice, optionally garnished with a slice of lemon!
