Maple Pecan Sweet Potatoes

Although this recipe takes a while to bake, it is actually a relatively easy to make.  I tried it both hot and cold, and liked it both ways.  If I had vanilla ice cream around, I probably would have put it on top of it!  One variation may be to add raisins- I think they would probably plump up as they bake.

Ingredients

1-1.5 cups sweet potatoes, diced small (~1/4 inch cubes)

3 tbsp butter, melted

4 tbsp maple syrup

2 tbsp brown sugar

1 cup pecan halves

Directions

1.  In a small baking dish (I used a loaf pan), mix the butter, maple syrup, and brown sugar together.

2.  Add the sweet potato and pecans and mix well until all of them are covered.  Cover the baking dish with foil.

3.  Bake at 350 F for 45 min.  Serve hot or cold.
