Maple Cinnamon French Toast

French toast falls into the "comfort foods" category for me, whether or not it is breakfast time.  This is a fairly quick recipe for making French toast with a slight twist since I really like cinnamon and maple flavors.  You can make the mix the night before if you want and keep it in the fridge until you are ready to use it.

Ingredients

1 egg

1/3 cup heavy cream (I substitute almond milk when I want to be healthier)

1/4 tsp cinnamon

1 tbsp maple syrup

pinch of salt

2 slices thick bread (I use Texas toast)

butter (for skillet)

Directions

1.  Whisk the eggs, heavy cream, cinnamon, maple syrup, and salt together.

2.  Heat a skillet on med-high.  When hot (water skitters across), add a small amount of butter to the pan and spread.

3.  Dip both sides of  a slice of bread in the mix, let it sit for a second, then shake off the excess.  Place on skillet and cook until golden brown.  Flip and cook the other side until golden brown.

4.  Serve warm- plain or with toppings (whip cream, syrup, butter, chopped nuts, etc).
