Kale Chips

My favorite crunchy, healthy, super addictive snack! The best part is that it's amazingly easy to make, especially if you buy the pre-cut kale. I love these chips with just olive oil and sea salt, but it's also fun to experiment with different seasonings like taco, fajita, BBQ, chipotle, etc.

Ingredients

1 lb kale, de-stemmed and cut into pieces about 2 inches big

1 tbsp olive oil

1/2 tsp sea salt (or to taste)

Directions

1.  In a large bowl, toss the kale with the olive oil and sea salt. 

2.  Arrange in a single layer on a pizza pan (the kind with holes on the bottom).  If you don't have a pizza pan, you can use a cookie sheet.  Another option is to use foil to cover the wire oven rack and then spread the kale on top.  It's very important to keep it in a single layer so that they crisp instead of steam.  

3.  Option 1 (Best option if you have time or want to store them): Bake at 200 F for 35-45 mins.  

Option 2 (If you want them quickly and are going to eat the right away):  Bake at 400 for 6-8 min.
