Chakri

This is one of my all time favorite Indian snacks!  So the recipe I'm posting is the baked version.  I'm not going to lie and say it's just as good as the fried one, but you do feel a whole lot less guilty eating them!  Anyhow, it's traditionally made in spirals, but I found when baking, it come's out crispier if you do it in a zig-zag.  If you don't have the brass tool (no idea what it's called) to squeeze it out, you can roll it into a thin rope with your fingers.

Ingredients

2.5 cups rice flour

2 large potatoes, boiled and mashed

1/8 cup oil

5 tbsp sesame seeds

1/2 tsp turmeric

1/2 tsp red chilli powder

1/2 tbsp sugar

2.5 tsp salt

2-4 green chillies, grated

~1/2 cup water

2 tsp lemon juice

Directions

1.  Mix everything together until it's a thick dough.  If it's too thick, then add more water.  If it's too thin, add instant potato spuds.

2.  Make into spirals or zig-zag lines directly on a cookie sheet or pan.

3.  Bake at 400 F for 15 min, flipping once halfway.
