Banana Nut Muffins

My breakfast for the week.  I'm considering it relatively healthy since it has whole wheat flour, nut flour, and nuts.  These can be modified to be vegan by replacing the milk with almond or coconut milk- both taste great with slight differences in flavor.

Ingredients

1 cup whole wheat flour

1 cup almond flour

1/2 cup turbinado sugar

1 cup walnuts, roughly chopped

1/2 tbsp baking soda

1/2 tbsp baking powder

1/2 tsp salt

1/4 tsp cinnamon

1/4 tsp nutmeg

1/2 cup milk (can substitute non-dairy alternative)

1/4 cup oil

1 1/2 cups bananas, mashed

1 tbsp chia seeds

Directions

1.  Mix the whole wheat flour, almond flour, sugar, walnuts, baking soda, baking powder, salt, cinnamon, and nutmeg.

2.  In a separate bowl, mix the milk, oil, vanilla, bananas, and chia seeds.

3.  Mix the dry and wet ingredients together.

4.  Line a muffin tin with liners.  Fill each liner ~3/4 full.  Bake at 350 F for 35 mins.
