Balsamic Vinaigrette Drizzle

As mentioned in my last post, this drizzle tastes amazing on top of sweet potato fries.  It makes a lot, so I ended up using it on Brussel sprouts, spinach salad, vanilla ice cream (with fruits), caramelized pearl onion, pretty much everything I made for a week! =)  You can make it a few days before and store it in the fridge until ready to use.  Let it come to room temperature so that it's not as thick.

Ingredients

1 cup good quality balsamic vinaigrette

3 tbsp honey

1/2 tbsp unsalted butter

Directions

1.  In a small pot, bring the balsamic vinaigrette and honey to a slow boil on med-high heat.   Stir continuously for 15-20 min, until it becomes 1/3 of the initial amount (I roughly measured it on the spoon I was using to stir).

2.  Remove from heat and add the butter.  Stir until melted. 

3.  Let it come to room temperature.  Then, drizzle on top of ice cream, sweet potato fries, salad, etc.
